Winter’s Back and a Recipe

3.43-Mile Run – COMPLETED

Well, even though spring began last week, it appears winter isn’t quiet ready to make its exit.  It’s a tad cold and possibly some snow, but I don’t think anything that will accumulate.  It will most likely be more of a messy and annoying commute tomorrow. I’ll probably have to push myself out the door for a run today. I did the same yesterday. I honestly did not feel like going, but I convinced myself. It was WINDY but I tried to stay in the sun as much as possible.

So last night, I picked up Sebastian at my in-laws and hung around for about half an hour before parting ways.  I had to pick up Lili at Kidz Village.  It’s one of those indoor, funplex jungle gym places.  My sister took my niece and Lili.

My sister had to bring Lili out the door and she was definitely upset that it was time to leave. She really did have a wonderful time though.

We headed home, ate dinner, gave kids a bath and put them down to sleep. They both went down to sleep pretty easy. I was tired myself but for some reason, stayed up with P to watch the game.

So, quick recipe for my girlfriend, Keyri, on the Chocolate Peanut Butter Energy Bars. I modified this a bit so I’ll put in parenthesis what it really calls for and what I used instead will be in bold. I got this recipe from my boss who found it in Health magazine.

Chocolate Peanut-Butter Energy Bars

Ingredients:

Cooking Spray
1/2 cup of whole-wheat flour
1/2 tsp baking soda
1/2 tsp of ground cinnamon
1 cup packed light brown sugar
1/2 cup of creamy or chunky peanut butter
1/2 cup of egg whites (2 large eggs)
2 TBSP of fat free Greek yogurt (2 TBSP of cannola oil)
1 tsp pure vanilla extract
1 1/2 cup of barley flakes or 1/4 rolled oats/1/4 cups of chia powder/seeds
3/4 cup of cranberries
1/2 cup dry roasted peanuts
1 cup semisweet chocolate chips, divided

Directions:

1. Preheat over to 350-degrees. Spray a 13×9 inch baking pan part w/ cooking spray. (I have the individual pre-cut brownie pan which I absolutely LOVE).

2. In a small bowl, whisk together flour, baking soda, and cinnamon. In a large bowl, beat brown sugar and peanut butter until well combined. Beat in egg whites, greek yogurt and vanilla. Stir in flour mixture. Add rolled oats, chia seeds/powder, cranberries, peanuts and 3/4 cup of chocolate chips, stirring to combine.

3. Spread evenly in prepared pan. Bake 20-25 minutes, until lightly browned and firm to touch.

Cool completely on wire rack.

4. In a small bowl set in a pan of simmering water, melt remaining 1/4 cup chocolate chips, stirring until smooth. With fork, drizzle chocolate over bars. Cut into 24 bars.
